Really, really good keto brownies

Keto brownies

Ingredients:

100g 90% dark chocolate
1/2 cup butter

3 eggs
1 cup powdered (I love brown) erythritol

2/3 cup almond flour/meal
1/4 cup cacao powder
1/4 teas pink salt
1/2 teas xanthan gum
1 teas granulated coffee
1 teas Baking powder

 

Method:

Preheat oven to 180°c

Prepare and grease a 20 x 20cm baking tray. 

Break chocolate into pieces and melt with butter in a saucepan or microwave safe jug.

Allow to cool slightly. 

Whisk eggs in a seperate bowl with powdered erythritol. 

Mix remaining dry ingredients in large bowl. Slowly fold in egg mixture until combined. 
Then add in butter and chocolate mixture. Don’t beat! Be gentle, but combine well. 

You can also add keto friendly nuts at this point. 

Pour into prepared baking tray and bake for 20 mins. 
Allow to cool in the tray. Enjoy by itself or with whipped cream and berries :)
